Chocolate Zucchini Muffins with Avocado {5 Years of Blogging!}

WE ARE HERE. Five years of blogging. Five years of recipes. Five years of me prattling on about my life, overusing alliteration, then convincing you that you should make the same thing I just did, which today includes these moist, decadent, and deceptively healthy Avocado Chocolate Zucchini Muffins.

Yes, it is my FIVE YEAR BLOGIVERSARY. This calls for a double serving of Avocado Chocolate Zucchini Muffins which, appropriately enough, contain double the chocolate.

Also, did you catch that ample alliteration in the opening paragraph? I'm honestly not sure how you managed to put up with my literary excess for so long, but you have. Five years after I hit "publish" on that first post, we are still together. For that, and for so much more, I am truly, deeply grateful.

When I began this website five years ago, I barely knew what a food blog was, let alone that it could be an actual job. If you had told me back then that if I stuck with blogging long enough and worked hard enough that other people—people who were not my mom, grandma, or Ben's aunt—would read it and even make my recipes, I would have stared at you like you had two heads.

If you had told me that I'd eventually leave my very stable consulting job to pursue blogging as an actual career in which I would earn an actual income, I would have stared at you like you had three.

I spent a long time staring at my computer screen last night, struggling for the words that would express how grateful I am for your support without sounding completely cheesy and cliché. I failed. Dozens of sentences written and deleted, and they all came back to one, clear point:

I couldn't do this without you, and I am abundantly, fiercely grateful that you are here.

I have the great privilege to do something that I love every single day and do it in a way that most intimately expresses my love for and connection to others: through food. I am immeasurably blessed.

While I enjoy many aspects of blogging, the one that keeps me motivated on the days when I struggle (and there have been many) is knowing that what I make in my Wisconsin kitchen comes to life in yours. Whether you leave a comment on a post telling me you tried a recipe, send me an email to tell me that your husband (or picky toddler) who "doesn't like healthy food" loved my dish, or post a photo of a recipe you made to Instagram (use #wellplated; it's the best way for me to find it!), YOU MAKE MY DAY. Five years and hundreds of recipes later, and it still blows my mind that people actually make what I post. Once again, thank you.

And to my quieter readers, the ones who sign up for my email list, like Well Plated on Facebook, or make a recipe without commenting, or who simply check the site every now and then to see what I've posted, I am incredibly grateful for you too. Your support is critical and allows me to continue to grow and create.

When I thought about what recipe I wanted to share to celebrate the five-year mark, it was harder than I'd expected. I'd already gone back and reshot my very first recipe (yay Green Chile Chicken Enchiladas!), and I'd recently posted this over-the-top Chocolate Chip Cookie Cake, so it felt too soon for another decadent dessert. I wanted whatever recipe I shared to feel representative of both my overall recipe point of view AND of the recipes I know that you, my wonderful readers, love most.

Answer: MUFFINS!

But not just any muffins. These muffins needed to be indisputably delicious while still using wholesome ingredients. I wanted them to taste rich and satisfying but still be fit for a healthy breakfast. Also, chocolate. We needed chocolate.

Although Well Plated is a mostly "healthy" food blog, to me healthy doesn't mean sticking to a specific diet, giving up favorite foods (chocolate forever ♥), or blowing your budget on fancy ingredients.

I firmly believe that healthy eating can (and should!) be just as satisfying as the alternative, if not more so. A healthy, balanced diet will help you lead a more energetic, balanced life, and it can be SO YUMMY too. I delight in creating more wholesome versions of everyday comfort foods, and muffins have been some of your absolute favorites!

  • This brilliant muffin tin: It's durable, easy to clean, and comes with a lid so that you can easily transport the muffins too.
  • Coarse grater: Easiest for grating a small amount of zucchini. (For larger amounts, I like to use the grater blade on my food processor.)
  • Healthy Chocolate Zucchini Muffins. Moist, tender muffins made with avocado, whole wheat flour, and chocolate chips. You'll never taste the veggies!

    Yield: 12 muffins

    Prep Time: 20 minutes

    Cook Time: 15 minutes

    Total Time: 40 minutes

    Ingredients:
  • 1 cup very finely shredded zucchini (about 1 small/medium zucchini)
  • 1 medium avocado, peeled and pitted
  • 2 tablespoons coconut oil, melted and cooled to room temperature (or substitute light extra-virgin olive oil or canola oil)
  • 1 large egg, at room temperature
  • 2/3 cup coconut sugar (or substitute granulated sugar)
  • 2 tablespoons milk, any kind you like (I use unsweetened vanilla almond milk)
  • 1 teaspoon pure vanilla extract
  • 1 1/4 cups white whole wheat flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon kosher salt
  • 1/2 cup semisweet chocolate chips, mini or regular
  • Directions:
  • Preheat your oven to 375 degrees F. Coat a 12-cup standard size muffin tin with baking spray. Set aside.
  • Spread the zucchini out on a few layers of kitchen or paper towels. Press out as much water as possible, changing out the towels as needed. Set aside.
  • Place the avocado in the bowl of a standing mixer fitted with the paddle attachment or a large mixing bowl. Beat with the mixer until the avocado is very smooth and no chunks remain. You should have about 2/3 cups of smooth avocado paste. Add the coconut oil, egg, coconut sugar, milk, and vanilla extract, beating until well combined.
  • In a separate bowl, stir together the white whole wheat flour, cocoa powder, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet ingredients, folding by hand with a wooden spoon or spatula and stirring just until the flour disappears. The batter will be very thick, almost like brownie batter, and the dry ingredients will take several strokes to work in between additions. Fold in the zucchini and chocolate chips, reserving a few of the chocolate chips to sprinkle on top of the muffins.
  • Scoop the batter into the prepared muffin cups, filling no more than three-quarters of the way to the top. Sprinkle with the remaining chocolate chips. Bake for 15 to 18 minutes, until the tops are set and a toothpick inserted in the center comes out mostly clean with just a few moist crumbs clinging to it. Let cool in the pan for 2 minutes, them transfer to a wire rack to cool completely.
  • Store leftovers at room temperature according to my guide for How to Store Muffins for up to 5 days or freeze for up to 3 months.
  • If you would like to reduce the calorie count of the muffins, omit or reduce the number of chocolate chips.

    Cosmopolitan UK's Dusty Baxter-Wright, explains why she thinks the backlash against Sarah Ashcroft's 'How I turned my Instagram account into a money-making business' interview is hypocritical, damaging, and a scary reflection of the blogging industry as a whole.

    That isn't to say I don't appreciate the blogging community; I think building your own money-making business from an iPhone, high-street clothes and an uncooperative boyfriend taking your pictures is highly commendable.

    Which is why I thought Sarah Ashcroft's interview about how she 'made it' was so impressive. She wasn't afraid to be candid, frank and honest about her powerful influence, how much money she makes and how hard it is to strive in such a saturated market.

    So why was that market - the blogging community - so quick to tear her down? Why was her message about originality, working hard and not blogging for the wrong reasons, misconstrued and bashed all over Twitter?

    What made fellow bloggers, who are part of the same 'community' as Sarah, throw phrases around about being "up her own arse", "an absolute idiot" and "arrogant and superior"?

    While I don't have the answer to all these questions, I hold the opinion that the reaction to Sarah's honesty is more damaging for the industry than anything she actually initially said.

    Yes, she questioned whether there's room for new bloggers that aren't unique ("the only way you're going to stand out is if you do something completely original"), and yes, Sarah openly discussed the scale and power of her influence, but do any of her comments legitimately constitute the onslaught of negative tweets she received online?

    Is pointing out the widely held opinions that the blogging market is highly saturated; that Sarah's influence is strong; that bloggers are in competition with each other; cause for a witch hunt?

    'How can an industry that prides itself on female empowerment join together to publicly tear down and outcast one of their own?'

    The definition of a 'community' is a group of people living in the same place or having a particular characteristic in common, which can absolutely be applied to bloggers.

    So what, then, is achieved by that group outcasting one of their own for voicing her opinion on a platform and sharing her views, other than damaging the community overall?

    I for one don't understand how an industry which prides itself on sisterhood, girl power and building each other up can justify calling Sarah's opinions "pathetic and childish", and continually tagging her in tweets and conversations on Twitter which aim to bring her down.

    An industry, which should be based on female empowerment and supporting one another for their achievements, instead referring to each other as "stuck up cows", "bitchy" and "arrogant as f***".

    One blogger even went as far as to 'call Sarah out' for putting others down ("This Sarah Ashcroft girl needs to get a grip and stop bringing people down"), but is that not a direct example of the hypocrisy of the backlash all together?

    That while she was being criticised for potentially putting smaller bloggers off the industry and "disheartening others" about their social media influence, in turn Sarah was made to feel demoralised for her honesty and dragged down herself?

    If anything, this negativity reflects far worse on the community than any of Sarah's comments in the initial interview. Even if you don't agree with what she said, what positives genuinely come out of joining together to publicly slate her? Where's the community in that?

    From my perspective, the only quote in the original interview that was cause for offence is Sarah's opinion that the market is over-saturated, and that new bloggers will struggle to find their niche. If you agree with her, fine. If you don't? That's fine, too, but there's no need for a barrage of abusive tweets and online victimisation."

    When you blog, your intent is to consistently pass valuable information to people over a long period of time.     Depending on what niche you're blogging about, your advertising value and the services you intend to run from it may be worth so much or next to nothing. So it's important you choose a niche carefully before you set out to start a blog.

    Since affiliate marketing is heavily based on performance metrics and compensations for every successful product, service, or sign up you can get for a brand, you don't have to worry about customer service, sales tax, warehousing, shipping, payment processing, and many other time-consuming activities.

    Also, you could get as much as 3% to 85% of a successful conversion, depending on the affiliate program you joined, and sometimes, you can get the percentages every month for life!

    Most affiliate marketers worldwide make thousands of dollars monthly. Some make hundreds of thousands of dollars, and then again, there are others who make a few hundreds or tens of dollars monthly.

    Disadvantages Of Affiliate Marketing

    The major problem with affiliate marketing is that you lack complete control. An affiliate partner could delist you at any time, drop their commission rates, offer shitty products that could affect your reputation, and they could even go out of business all the same.

    They could also impose strict rules on how you generate your sales. Many affiliate programs outrightly ban Pay Per Click (PPC) advertising to generate leads. So if you spend a lot of money on Google or Facebook ads, they could drop you as an affiliate and all the money you've spent so far would go to total waste.

    Lastly, when you refer a person to an affiliate partner, they get all their emails, phone numbers, addresses, and more after the purchase is successful. Meaning they could remarket several services to them over and over again, making you lose out on a lot of potential future income from your referrals.

    Advantages Of eCommerce

    Running an eCommerce site gives you complete control over the products and services you sell. You get to handle customer service, give discounts as you wish, collect the customer's email addresses, and also re-market several other products to them.

    Whether you're selling eBooks, online courses, fashion items, tech gadgets, and more, scaling up an eCommerce site can be a lot faster than a blog and an affiliate marketing site.

    Disadvantages Of eCommerce

    The largest disadvantage of eCommerce is that despite scaling-up really fast, you may make zero profits for many years. This is even worse for countries in Africa, where the largest eCommerce companies in Nigeria are yet to break-even, despite having spent million of Dollars promoting their brands.

    Also, running an eCommerce business requires a whole lot of money. You'd have to purchase a lot of items for resale, handle customer complaints, be faced with a lot of product returns, and even spend a lot of money on managing day-to-day operations and staff salaries.

    With all these in place, running a successful eCommerce business in Africa is more difficult than ever.

    Which Should You Then Go For?

    Blogging, affiliate marketing, and eCommerce have three different models. Before you decide which you should go for, you need to take note of these three areas:

  • eCommerce – I want to start making money today (but could be no profits)
  • Affiliate Site – I want my business to be low-risk and still be making money even if I'm not there. (Could be 100% profits and very substantial)
  • Blogging – I want to be an established figure (expert) and to create an audience in the process. Money is not important to me now, but later. (Could be the best bet you make)
  • By reviewing these three points, your current preferences should determine which plunge you should take.

    My Personal Advice

    While blogging, affiliate marketing, and eCommerce are three different models, the best way to maximize your income on the internet is to combine all three.

    When you pass valuable information on your blog, asides offering advert space and consulting gigs, you could also promote products from your affiliate partners, based on an in-depth review you'd post periodically, and then sell an online course, eBook, or a product that your readers really want and that compliments your articles with information that they can't easily find online.

    Blogging BottleRock: Hair of the dog

    I hate how old I feel these days. For 27, my later nights almost always get rewarded with painful mornings, yet I bring this on myself every time.

    In alcohol's defense, I was drinking whiskey and wine at different points in the night, so really it's a human issue at the root of today's hangover. The Taco Bell drive-thru on the Uber ride home at 2 a.m. also didn't help.

    So I started today on the slower side of life. After adding the last chunk of the night to yesterday's blog — which you should read — I made my way to BottleRock around 2 p.m. to try and catch a vibe on Day 2.

    But first, I've got to lose this headache.

    I linked up with some Southern boys from Savannah, Ga., and we started to wander through the culinary garden, but Dirty Heads and Chef Tim Love were just called onto the culinary stage. The surprise, however, was the third person introduced, actor Miles Teller. 

    You know Teller, right? The dude from "War Dogs," co-starring with Jonah Hill. He was also in "Whiplash."

    What took place after the intros was absurd. Teller is even more hungover than I am, and he starts saying all sorts of ridiculous things. At one point, he and Love start jamming on two drum rigs made of pots, pans and cutting boards. 

    Teller was actually into it, though. "You really want to see a hungover guy bang pots and pans?" When he got up, he slid across the stage saying, "Slayed it." Then they began cooking ribs.

    Teller looks like he's one of the boys, too. He's rocking a Phillies hat, a Grateful Dead shirt and some Nike Air Max's. He honestly makes me feel less jaded about people in Hollywood.

    The Southern boy in me comes out when I see bands like The Devil Makes Three. I can't put my finger on why, but I think it has something to do with the stand-up bass. The boogie comes out naturally. It probably also has something to do with some good old-fashion banjo plucking. 

    Under the hot afternoon sun, The Devil Makes Three feels right. My mind goes to campfires and singing whiskey songs — which is something I've never actually done but always feels familiar enough for me to use it as a descriptor like I have.

    As hard as this is to leave, especially after you got caught up for a good 45 minutes, I'm all about turning schedule conflicts into compromises. Mavis Staples, this sinner is coming.

    Miner Family Winery Stage, 4:31 p.m.

    After we cross the path that opens up to the side exits, the music at the stage becomes clearer. She's playing her cover of Funkadelic's "Can You Get to That", which I recently found out she recorded with Jeff Tweedy (that's now two mentions of Tweedy this weekend) a few years back. Needless to say, this completely validates the early exit from The Devil Makes Three.

    Staples is like the Yoda of soul and gospel music. There's a prophet-like energy to her as she growls into that microphone, making the hair on the back on my neck stand. She glides across the stage. Her presence is captivating, even if a lot of the people around me too self-involved to realize it.

    This is the kind of moment that will linger long after this weekend. The same thing happened last year when I watched Buddy Guy shred his set at this very same stage.

    And for perspective, Gregg Allman died today. That one really, really hurts — like most of us were just getting over Butch Trucks' death. To be able to see foundational pioneers like this are rare, so I don't take this for granted.

    OK, I'm really hungry and walking back with a seat waiting for me at the final destination of this short trip.

    I just saw the words "pork belly bao buns" at the Cross Hatch Eatery booth by the Miner Stage.

    "Crispy pork belly with cucumbers, picked vegetables, onions and house hoison sauce."

    Uh, yeah bro, this is definitely happenin'.

    You will generally get bad blogging advice from struggling bloggers. Otherwise, they'd be successful! You will get good, proven blogging advice from experienced, seasoned, professional, full-time bloggers.

    Follow guys like Darren Rowse and Zac Johnson. Read their latest blog posts. Buy their courses. Follow them on social media.

    Pros know. So go follow pros.

    The best bloggers offer you mindset and practical blogging tips to blast through your biggest obstacles because they are experts at hopping through the minefield of blogging blocks that hamstring most bloggers. Otherwise, they wouldn't be so darn successful.

    2: Drill Down Your Reason Why (F It)

    Fun. Freedom.

    Follow these 2 "F" words to find your way to blogging success.

    If you feel so darn frustrated with blogging that you want to throw in the towel you are likely in survival mode. Blogging to make enough money to put food on the table. Blogging to pay for a roof over your head.

    If your vision consists of trying to pay bills you probably won't inspire many people who have grander visions.

    Detach some from the dreaded blogging "F" word – finances – to blog predominantly for fun, and to free yourself.

    Pick a blogging topic you feel passionate about. Choose content creation channels that feel fun and freeing to work.

    His deadly fangs smiled at me, daring me to make the grave error of taking one step closer to this primitive, primordial warrior from another era.

    An 8-inch long Scolopendra centipede barreled into the kitchen of the house where we lived in Thailand. I tossed the dog to the side like a hot potato. Centipede venom can be fatal if small dogs or kids are stung and a few folks I talked to said the 'pede pain of a sting was excruciating, as they felt intense pain for days after being stung and they did not fully recover for up to 3 months.

    Living in the tropics for the past 6 years, I both feared the centipede but also found myself fascinated by such a specimen. An apex predator of the insect world, up to a foot long, lightning fast, savagely aggressive and pretty much the baddest ass creature I have ever seen in person.

    After 30 minutes of hunting him down, I finally batted him outside of the window, baseball-bat-style, and we never saw him again.

    It may sound weird, but the 'pede taught me a successful blogging lesson……

    What sounds more enthralling? That centipede lead-in? Or a lead in of "I learned a successful blogging lesson today…."?

    Every blogger should be in the process of opening one income stream now. Not tomorrow. Not this weekend. Right now. Because even if you don't plan to be a professional blogger you may as well make some money while doing what you love to do.

    Unless you are a Blogging Buddha, enlightened and shunning a worldly life, you will be needing money as a means of exchange to cover the basics of food and shelter.

    So open one income stream today.

    Spending more time on personal development roots out blogging limiting beliefs so you can feel and release these energies, allowing you to proceed from an inspired space.

    Spend 20 to 30 minutes:

  • Meditating
  • Visualizing
  • Praying
  • Exercising
  • after waking.

    This sets the tone for your day.

    Successful people in all walks of life tend to subscribe to this "power half hour" routine to mentally prepare themselves for the day.

    You can't be a hero if your being screams "zero".

    You can't be a champ if your being screams "chump".

    Engage in self-help daily to start being a blogging hero and champ, even if appearances suggest you are still struggling.

    7: Dive into Your Fears

    I felt terrified to write my first guest post many years ago.

    I struggled horribly by cowering to this intense fear of guest posting.

    Since then I have written and published hundreds of guest posts.

    If you feel like a blogging zero you are surrendering to your fears versus diving into these lower energies.

    Take a deep breath. Relax your mind. Then take the plunge, diving headfirst into your fears.

    As a guy who dives into his fears regularly, I assure you that fears are wimps. Fears wuss out when you head in their direction.

    Embrace a few uncomfortable moments. Kill your blogging fears.

    All your blogging dreams lay on the other side of fear. So dive in.

    8: Generously Promote Other Bloggers

    Stop being a blogging lone wolf. Solo acts struggle horribly online.

    Rocking bloggers understand that blogging is a relationships game.

    Example

    Tweet 30 fellow bloggers on Twitter today.

    10 to 15 bloggers may tweet you in return. Friendships form. 10 to 15 Twitter followings become exposed to your blog.

    Multiply these new Twitter folks by Facebook friends, G Plus Circle Members and new members of various social networks, bookmarking sites, forums and other websites where your new blogging buddies promote you.

    Promote yourself by promoting other bloggers aggressively.

    Tap into the power of networking to grow your blog traffic and income exponentially.

    9: Integrate Multimedia into Your Blog

    Right now, you are reading words on a screen. Images pop up in your mind's eye as you read these words.

    Imagine if you could see me on video? Or imagine if you could hear my voice via a podcast?

    I use Facebook Live videos extensively to add a human touch to my blog. I also run a podcast to remind you that yes, I am a human being. Not words on a screen.

    Struggling bloggers usually have a helluva time getting readers to trust them because they rarely use multimedia to prove their humanity.

    Successful bloggers generally use some form of multimedia to show that they are living, breathing, compassionate human beings, and not words on a screen.
